Chicken with Dates



Preparation time: 10 minutes
Cooking time: 30 minutes
Servings: 2


Ingredients:
4 chicken thighs, skinless and boneless  
A pinch of salt and black pepper  
½ tablespoon olive oil  
1 teaspoon cumin, ground  
1 teaspoon smoked paprika  
1 teaspoon coriander, ground  
1 garlic clove, minced
½ yellow onion, chopped  
1 carrot, chopped  
14 ounces tomatoes, chopped  
4 tablespoons chicken stock  
4 medjol dates, chopped  
½ lemon, cut into wedges  
4 tablespoons green olives, pitted  
2 tablespoons pine nuts  
Chopped mint for serving  


Directions:
1- In a bowl, mix chicken thighs with salt, pepper, oil, cumin, paprika and coriander and toss.
2- Set your pressure cooker on sauté mode, add chicken and brown for 5 minutes on each side.  
3- Add garlic, onion, carrot, tomatoes, stock, dates and olives, stir, cover and cook on High for 20 minutes.  
4- Divide into bowls, sprinkle pine nuts and mint on top and serve.
