Special Paleo Soup



(Prep + Cook Time: 55 minutes | Servings: 6)

Ingredients:
1 yellow onion; finely chopped  
1 tbsp. avocado oil  
3 thyme springs; chopped  
3 garlic cloves; finely minced  
28 oz. canned tomatoes; chopped  
6 oz. tomato paste  
1/4 cup water  
1 lb. sausage; chopped  
14 oz. beef stock
6 mushrooms; chopped  
1 small red bell pepper; chopped  
5 oz. pepperoni  
2.5 oz. black olives; chopped  
A pinch of red pepper flakes  

Instructions:
1- Heat up а pot with the oil over medium high heat and melt it.  
2- Add half of the onion, garlic and thyme, stir and cook for 5 minutes.  
3- Add tomatoes, tomato paste and water, stir; bring to а boil, reduce heat to medium-low and simmer for 20 minutes.
4- Pour this into your blender, pulse well and leave aside for now.  
5- Heat up а pot over medium-high heat, add sausage, stir and cook for а few minutes, breaking into small pieces with а fork.  
6- Add the rest of the onion, mushrooms and the bell pepper, stir and cook for 5 minutes.  
7- Add tomato soup you’ve blended and beef stock, stir and cook for 5 more minutes.  
8- Heat up а pan over medium high heat, add pepperoni slices, stir and cook until they brown. Pour soup into bowls, top with red pepper flakes, olives and pepperoni.
